Chocolate pear puddings

Ingredients:
3 tinned pear halves, drained.
50g butter.
200g dark chocolate buttons.
1/3 cup brown sugar.
1 egg.
half a cup self-raising flour.
1.5 tbsp cocoa powder.
6 extra slivers of tinned pear, drained.

Method:
Step 1
Preheat oven at 160 degrees Celsius. Line six muffin trays with patty papers.
Step 2
Place pear halves into a food processor and puree until smooth. Measure half a cup of puree.
Step 3
Place the butter and chocolate into a medium sized microwave safe bowl. Heat in the microwave until butter & chocolate have melted, stir gently with a metal spoon to combine well.
Step 4
Add the brown sugar and stir to dissolve into the mixture.
Step 5
Add the half cup of pear puree and stir well.
Step 6
Add the egg and stir until well incorporated.
Step 7
Sift flour and cocoa powder into the mixture, fold through.
Step 8
Spoon the mixture between the patty papers, ensuring there is an even amount in each.
Step 9
Place a sliver of pear on top of each patty paper. Bake in the oven for 15-20 minutes or until firm when gently pressed on top.

Avocado pancakes

Ingredients:
2 eggs.
190ml milk.
half an avocado.
1 tbsp lemon juice.
1 tsp lemon zest.
1 tbsp butter.
half a cup polenta.
1.5 tbsp plain flour.
half tsp baking powder.
pinch of salt.

Method:
Step 1
Crack eggs into a large bowl and whisk well.
Step 2
Measure butter into a microwave safe bowl. Heat in the microwave until melted, carefully remove and allow to cool.
Combine milk, avocado, juice and zest of the lemon into the bowl of a food processor. Process until smooth in texture.
Step 4
Place avocado mixture into the egg bowl.
Step 5
Add the melted butter to the egg bowl and whisk all ingredients together well.
Step 6
Combine polenta, plain flour, baking powder and salt together in a medium bowl. Stir well to combine all ingredients.
Step 7
Add the medium bowl ingredients to the egg bowl. Using a wooden spoon, stir to combine all ingredients well.
Step 8
Heat a frying pan over medium heat on the stove top.
Step 9
Lightly spray frying pan with canola spray. Ensure this is done away from the stove to prevent a fire.
Step 10
Carefully place two tbsp of mixture per pancake into the frying pan.
Step 11
Cook for 2-3 minutes before flipping pancake and cooking on the other side. Repeat until all mixture is cooked.
Step 12
Serve pancakes with tomato salsa and sour cream.
